Summer is finally here…YAY! 

To celebrate, I want to share with you this delicious, incredibly quick and easy meal packed full of goodness!  It’s the perfect summer breakfast any day of the week!

Chia seeds are packed full of nutrients with very few calories.  One serve (28g) of chia seeds contains 12g of carbohydrates (11g of which are fibre), 4g of protein and 9g of fat (5g of which are Omega-3s).  Chia seeds are chock full of antioxidants (antioxidants fight the production of free radicals, which can damage molecules in cells and contribute to ageing and diseases like cancer).

A chia pudding is such a quick, easy and delicious breakfast.  You can literally prepare this meal in 5 minutes!

Here is my go to chia pudding recipe for summer (infused with some citrus essential oils)!

Ingredients

Makes Two Serves 

Method

  • In a small jar or bowl, combine the almond milk with your choice of essential oil.
  • Whisk in the chia seeds, cover the bowl and refrigerate overnight.  Overnight the chia seeds will absorb the moisture to become a pudding-like consistency.
  • Before serving, stir again and serve with some chopped nuts, mixed berries and passionfruit.

This is such a delicious and super easy meal that is going to keep you full for longer!
